  How It Works – A Simplified Explanation  
           
  a Food is the very sophisticated fuel for our body and is interpreted by its atoms, molecules and resonance. Food recognition by the body starts in the mouth. Not only are the vitamins and minerals tagged in the mouth and targeted to specific areas in the body (hence the need to chew food well) but antigens are recognised here too.

However, our immune system can sometimes get in the way. It can mistake some foods as a foreign substance (antigen) and can go into attack mode on those ‘innocent’ foods. We can then become intolerant (often called a ‘sensitivity’) to those foods. Let’s look a little closer at the immune system...

The immune system produces antibodies to destroy the food ‘antigen’, just like it would with any foreign body such as a virus or toxin. We all know what a virus can feel like. Afterwards, our cells retain a memory of that antigen and will waste no time in eliminating it – a phenomenon known as immunity.

In this situation of some foods being treated as an antigen, we can experience any of the myriad of symptoms suffered by those with food intolerance’s – examples include skin and digestive problems, weight, PMT or mood swings.

In contrast, a classic allergy reaction is usually severe and happens immediately the food is eaten, e.g. swollen lips, convulsions, shock, etc. Food intolerances are usually subtle and very difficult to isolate without a food intolerance screening. This is because our bodies will often adapt to the intolerance, even crave the particular food and still react to it! These reactions can occur in a seemingly unconnected location (maybe the skin), often after a considerable delay and sometimes with a variety of symptoms.

Food intolerance’s can often disappear after avoidance of all the intolerant foods on your list for at least one month, although sometimes it can take two to six months. It simply depends on the individual. It is allergies that tend to be permanent.
